one of my favourite recipes fro my dear father which I have adopted to my catering menu in vegan variant as well (see recipe) for the seasoning i use an arabic spice called Hawaij - a very rich spice mix containing cumin, coriander, turmeric, black pepper, and cardamom. if you want to try this recipe but don't have the spice - register to our mailing list at our home page https://www.a-la-shuk.com/ add your Address and you will get per Post a sample of our home made version!
now for the recipe:
for about 3-4 people:
3 onions
2 tablespoon olive oil
3 red pepers
5-6 karotts
2 Chicken Legs (for a vegan dish replace the chicken with Soja Medaillons after they set for 10 minutes in hot vegetable stock)
1 cup basmati rice (you can replace the rice with brown rice)
1 cup f bowled chicken broth (1,5 cuts for brown rice)
8 cardamon capsule
1 red chilli
5-6 garlic cloth
1/2 cup dried cranberry
1 tablespoon Hayajeg (see and of the recipe)
salt, pepper
1. cut onion to cubes
2. fry in a big pot with olive oil with medium temperature for about 10-15 minutes until the onion is see-through and a bit brown on the edges
3. in the meanwhile cut the pepers to thin stripes
4. peal and Grate the carrots
5. when the onion id ready, add the chicken or Soja Medaillons and fry for a couple of minutes until the get a bit color
6. add all the rest of the ingredients and season with salt and paper as you like, mix all together.
7. cook on a small temperature with cover for 20 minutes (about 30 minutes for brown rice)
