Israeli Salad


A perfect light but real meal for those warm summer days.

The Israeli salad basically consists of various vegetables cut into small (or very small) pieces, freshly squeezed lemon juice, good olive oil, salt and pepper. Done. It can be prepared in 10 minutes, is healthy and simply delicious. It is best to use fresh organic produce, the taste is very dependent on it.

Cucumber and tomato are always included, the other ingredients according to taste. In Israeli families, there can be lively discussions at the dinner table as to whether and why there is an onion in the salad. (We just call it “the salad”.) ☺

Here comes my favorite variation. For a vegan option, you can replace the feta cheese with fried tofu or fried mushrooms, or simply leave it out altogether.

Za'atar is a huge PLUS but not a MUST.

Ingredients for two people or one hungry person:

1 small cucumber or 1/3 lettuce cucumber

1 tomato

1 carrot

1/2 red pepper

1/2 red onion

2 tbsp. corn

50 grams feta cheese

1 tbsp. za'atar

Juice of 1/2 lemon

1-2 tbsp. of good quality olive oil





Cut the vegetables into small pieces, put the corn and feta in a bowl, season with lemon juice, olive oil, salt and pepper, stir once, add the za'atar and eat fresh.
